Apple Cinnamon Breakfast Quinoa
Y'all it's freaking colder than cold outside right now. Earlier this week, I was in a t-shirt. Now I have to wear a sweater, a hoodie, my heavy coat, extra socks, hat, ear muffins and layer my pants just to walk the dogs. Maybe I'm a big baby. But it's also dropped 40 degrees in a week. So suck it Mother Nature.
Anyways this morning after walking the dogs, I was half frozen and hungry. I poked around the kitchen and came up with a filling, warm breakfast - Apple Cinnamon Breakfast Quinoa. Took about 30 minutes total on the stove, no clue how it would do in the microwave. I'm trying really hard to not use the microwave as often, so it's the stovetop for me.
Apple Cinnamon Breakfast QuinoaMy completely winging it recipe is as follows:
Start with making 1/3 cup quinoa cooked in 1/3 cup water with cinnamon (I put a lot in), cloves, a pinch of salt and about a teaspoon of olive oil. After about 10 minutes, add in 1/4 cup applesauce and a drizzle of maple syrup and let it finish cooking until all water and applesauce absorb (took mine about 20 more minutes).
